Easy, But Looks Hard, Sugar Cookies

With the holiday season upon us, it is so easy to have our eyes think we can eat more than our stomachs can hold. And with so super yummy recipes available, our eyes are not wrong. The following recipe is one of my favorites this time of year and sure to put a smile on even the Grinch’s face. There is a twist with the frosting which makes the cookies look like swirled peppermint candies. Here are your ingredients:

2 3/4 cups of flour
1/2 teaspoon of baking powder
Pinch of salt
3/4 cup of sugar

Combine these dry ingredients and then add the following ingredients to your dry mix:

1 cup or 2 sticks of room temperature butter
1 egg
1 teaspoon vanilla

Mix well. This sugar cookie dough will need to be chilled for an hour before being rolled out and baked. For this recipe a round cookie cutter is needed and if the dough gets too soft while you are working with it, just pop back into the refrigerator to firm up.

Line your baking sheets with parchment paper and set the finished product in the oven at 350 degrees for 9 – 11 minutes until golden brown.

While your cookies are baking, prepare your frosting with the following ingredients:

1 bag of confectioners sugar
Water, added one tablespoon at a time
Red and green food coloring
2 Tablespoons Meringue powder

Mix all ingredients, except food coloring, adding water until mixture coats the back of the spoon nicely. Divide the mix up in three parts, adding green and red food coloring to one part each. Mix well. Using a rimmed baking sheet pour in your white icing, covering the bottom. Next drizzle the red and green icing for a swirled look. Dip the top of you cookies for a festive look. Sprinkle sugar for a frosted look if desired. Enjoy!!
